Color of the tea changes depending on the Ph level of the water, thus adding lemon juice can make it violet and sometimes red according to the acidity level of the water.
The tea is prepared by simply adding the flower petals to boiling water and then seeping it for 3-8min. I recommend adding cinnamon, ginger, fenugreek, lemongrass, Tulsi/Basil  to impart wonderful flavor and additional benefits to the tea.

Bluepea is a major ingredient in the Thai food culture and are used to make Blue rice, Latte, Lemonade, Ice tea,  Desserts etc apart from Tea.

P. S. The tea in the picture shows a 'Green color' because I added Bluepea petals to Fenugreek boiled water.
